High Fiber Banana Bread -Moist And Healthy

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

3 medium ripe bananas (mashed)

7-8 pitted prunes (cut into small pieces)

7-8 pitted dried apricots (cut into small pieces)

2 tablespoons fat-free or low-fat milk

1 cup all-bran cereal (original or extra fiber)

1/3 cup softened butter substitute

1/3 cup maple syrup

2 eggs


* Preheat oven to 350°F.
1. In a small bowl, mix flour, baking powder and baking soda and set aside.
2. In mixing bowl, stir together (mix well) mashed bananas, cereal, milk and dried fruit. Use masher to mix and mash well. Let mixture stand 5 minutes to soften cereal.
3. In mixing bowl, beat butter substitute and maple syrup; add eggs and beat well. Stir in cereal mixture. Add flour mixture, and stirred until combined.
4. Spread batter into a loaf pan coated with cooking spray. Bake at 350°F for about 45-50 minutes or until toothpick comes out clean. Let cool 10 minutes before removing from pan, and cool completely before slicing.

Chocolate Chip Banana Bread

Ingredients
• 1 cup sugar
• 1 stick/ 4oz butter
• 2 eggs
• 3 bananas
• 1 tbsp milk
• 1 tsp cinnamon
• 2 cups flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt salt
• 2/3 cup chocolate chips

Method
1. Pre heat oven to 325˚F
2. Mash bananas and milk and cinnamon together with a fork
3. Sieve all dry ingredients and set aside
4. Cream the butter and sugar together in a bowl with an electric whisk until lighter in color
5. Gradually add in the eggs and the banana mixture, followed by the dry ingredients until they are all combined
6. Stir in the chocolate chips
7. Pour into a greased 1lb loaf tin and bake in the oven for 1 hour and 10 minutes or until a skewer comes out clean. Leave to cool in tin for 5 minutes and then turn out to cool on a wire cooling wrack
8. Beverage: Cup of tea, glass of milk, afternoon tea or brunch
9. Additions: replace choc chips with pecans or walnuts

The Best Banana Bread

INGREDIENTS:
1/2 cup margarine, softened
1 cup white sugar
2 eggs
1 1/2 cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.

Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.

Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

I have a good recipe for banana bread I'd be happy to share....

You need:
6 very ripe bananas
1/2 c. butter
4 eggs
2 tsp. baking soda
1 tsp. clove, 1 tsp. cinnamon, 1 tsp. nutmeg
1/2 c. vegetable oil
2 c. sugar
3 c. all purpose flour
1/2 tsp. salt
1 1/2 c. chopped pecans or walnuts (optional)

In medium bowl mash bananas and pour oil over top; set aside. Cream sugar and butter in different bowl; add eggs one at a time as beating with hand mixer. Add egg mixture to bananas and oil and mix well. Combine dry ingredients in separate bowl and add to banana/egg mixture. Mix well and add nuts if desired. Spoon or pour into 3 greased bread (loaf) pans

Bake at 250 degrees for 1 1/2 hrs.

BANANA BREAD

2 1/2 cups white or white whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
2 cups sugar
2 cups over-ripe mashed bananas
4 eggs, beaten
1 cup chopped nuts
1 tablespoon banana liqueur or dark rum

Preheat oven to 350F.
Combine flour, baking soda and salt; stir to mix well.

In the bowl of an electric mixer, beat together shortening, sugar, mashed bananas, and eggs. When well beaten, gradually add the flour mixture while mixture is at lowest speed. Mix only until combined.

Stir in the banana liqueur or rum and the chopped walnuts, pecans, hazelnuts or macadamia nuts.

Butter and flour a loaf pan. Bake for 65-70 minutes or until cake tests done (toothpick inserted in center comes out clean).

Remove from oven and allow to sit for several minutes. Run a bread knife around edges of loaf pan to free it from sides and remove from pan. Rub the top of the still-warm loaf with a pat of butter to soften and glaze the top, if desired.

Serve with whipped cream cheese spread on each slice.

BANANA NUT BREAD

~BANANA NUT BREAD
1 cup sugar
1 stick (1/2 cup) butter, softened
2 eggs
3 large ripe bananas, mashed
1/2 cup chopped pecans or walnuts
2 tablespoons buttermilk mixed with 1 teaspoon baking soda
2 cups flour
1/4 teaspoon salt
1.Heat oven to 325 degrees. Beat sugar and butter in a large bowl with a mixer on medium high speed until light and fluffy, about 3-5 minutes. Beat in the eggs, mashed bananas, nuts and buttermilk mixture. Add flour and salt, mixing just until combined. Pour into a greased and floured 9-inch loaf pan, smoothing the surface with a spatula.
2.Bake until a toothpick inserted in the center of the loaf comes out clean, about 1 hour; cool in pan on wire rack about 15 minutes.

MOIST BANANA BREAD

2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. nutmeg
2 eggs
1/2 c. butter
2 tbsp. buttermilk or regular milk
1 tsp. ReaLemon
1 c. sugar
3 med. bananas
1 c. nuts (optional)

Heat oven to 350 degrees. Grease loaf pan. Mix flour, baking powder, salt, baking soda and nutmeg in a large bowl. Put eggs, butter, buttermilk, lemon juice and sugar into blender and mix until smooth. Add bananas and nuts; continue to mix. Pour into dry ingredients and mix only until flour is moistened. Pour into prepared pan and bake 45-50 minutes.

3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. serves 12
