3 large Sweet Potatoes
2 tablespoons of Olive Oil
1 teaspoon of Salt
1 teaspoon of Pepper
1/2 teaspoon of Cayenne
Directions:
1. Preheat oven to 475 degrees.
1. Thoroughly scrub and rinse sweet potatoes. Cut lengthwise into fries.
2. In a large bowl, mix the olive oil, salt, pepper and cayenne together.
3. Add sweet potatoes to bowl with mixture. Toss them until the oil and spices are evenly distributed.
4. Place a sheet of aluminum foil over a cookie sheet.
5. Arrange sweet potatoes in a single layer on aluminum foil.
6. Bake for 25 minutes. Flip over the sweet potatoes and bake for another 25 minutes.
7. Remove from oven and let stand for ten minutes before serving.
When done, the sweet potato fries should be golden brown and slightly crispy. If not, toss them back in the oven for another 15 minutes. For dipping sauces, I recommend using ranch dressing or ketchup.
Its a shame that most people rarely eat sweet potatoes. The health benefits they posses warrant them a stable placement on everyone's diet. Using this sweet potato fries recipe will get even the most finicky of eaters to try out this underrated vegetable.
